Super Healthy Pumkin Pav Bhaji(Low GI & No Potatoes)

I am hiding my face under a pillow but What would you Guys know ? ! I have been away weeks from blogs due to flue and that left me with bitter mouth. I kept on craving for dishes which would help my taste buds back on track !!

Masala Pav

I dreamt of Sardar Pav Bhaji we had at Taradeo, Mumbai !! There’s a huge cue for getting into the restaurant and the best part that Pav Bhaji is Prepared on large Tawa over Coal Fires !! It has way too much of BUTTER 😛

Street Food was no more an options for me and home made Pav Bhaji seemed a good Idea !! This time I thought of doing some innovation and avoiding Potatoes and making a Low GI version

The only Difference between a restuarant and home made pav bhaji is that it has much of Green Peas !! And and You can have it next day

So, If you are Ever down with Fever or flu Pumpkin Pav Bhaji is your rescue for Bitter Mouth

Here’s one secret I love to do with my Pav is to add more masala to them, Heat up tawa add butter+ Pav Bhaji Masala and let the Pav merge to this chatpata mixture !! Do not keep it for minutes otherwise masala will burn up.

  • 1 cup Peeled and Cubed Pumkin
  • 1/2 Cup Bottle Gourd Peeled and Cubed (Lauki)
  • 1 cup cauliflower florets of
  • 1 Banana Boiled and Peeled Raw
  • 1/2 cup Green Peas Boiled
  • 1/2 cup Capsicum Chopped
  • 4 Tomatoes Pureed
  • 1 cup Onion chopped
  • 1 tbspn Ginger Garlic Paste
  • 1/2 tsp Turmeric
  • 1 tbspn Red chilli Resham Patti Powder
  • 1 tbspn Pav Bhaji Powder
  • 2 Butter Olive Oil tbspns +
  • wedge Corainder Lemon for & Garnish
  • 10 Pav Freshly baked

Instructions
  1. Boil Water in a Pressure Cooker, Add Cauliflower,Bottle Gourd and Pumkin. Wait for 1-2 whistle. Let it cool and Mash all the veggies removing water
  2. Take a Kadai, Add Butter and once it melts add Olive Oil. Add Capsicum, Ginger-Garlic Paste,Onion saute till done. Add salt and Pureed tomatoes after it bubbles up lower the flame,adding Red chilli and Pav Bhaji Malasa Powders
  3. Add mashed boiled Veggies and let it simmer for 5 minutes on a slow flame
  4. Serve hot Pav Bhaji topped with Onion and Pav

Tips :

1. For Spicy Pav Bhaji Lovers, Make a spicy blend of Dry Kashmiri Red Chillies and Garlic

2. Prepare More of Pav Bhaji because its more Tastier and flavorful next day
